Hailing from the heart of Chicago, the brewing side of the Local Option beer bar offers a brash, in-your-face and down-the hatch approach to craft beer appreciation. 

They brew with bravado and aren’t afraid to bring a little well placed irreverence to the process of beer making while still respecting the long-standing traditions that inspire them. With great success, Local Option Bierworker experiments with seemingly long forgotten recipes like the Kentucky Common, and marches unabashedly up to others and declare their intent to amp up their already on-point interpretations.

How about adding a little Black Lava Salt to their otherwise archetypical Schmetterling Gose, for example? Or simply nailing stalwart styles like Dampf Loc, a steam beer.

It’s this brazen attitude and attention to detail that grabbed us and we knew these beers could simply not be restricted to the underground. These guys put the mash paddle to the metal and we’re just excited to be along for the ride and to share them with you.
